the why

we pour the bottle the way it was made unhurried, a little wild, honest about where it came from.

everything here is low-intervention: grown without correction, fermented with wild yeast, bottled with little or nothing added. we keep the lights low and the volume warm, put a record on, and let the evening take its own time. there is no rush to the next table. stay for the side b.
